These delicious buttery bran muffins are full of the best of breakfast Makes 12 muffins Preheat oven to 3750F ~ 190 C
Mix together in large bowl:
2 cups all-purpose flour
3/4 cup oat or wheat bran
1/2 cup light brown sugar
2 tsp. baking powder
3/4 tsp. baking soda
1 tsp salt
1/2 tsp cinnamon
In separate bowl, whisk:
1 cup shaken buttermilk
1/3 cup mild honey
1/2 stick unslated butter, melted and cooled
1/2 ripe banana mashed with a bit of fruit juice
1/4 cup plain yogurt for creaminess
2 large eggs
1 tsp vanilla extract
1 cup golden raisins
1/2 cup walnuts
Add wet to dry ingredients; fold in raisins, walnuts.
Fill muffin cups. Sprinkle a spot of sugar on top of each muffin for that extra fun crunch.
Bake until a wooden pick inserted into center of a muffin comes out clean, about 10 minutes.

Muffins keep well in airtight container for 3 days….
Butter measurement exchange:1 stick of butter = 113.5 gr or 1/4 pound or 4 ounce or 1/2 cup or 8 tablespoons or 14 teaspoons .
